Afghan Apple-Banana Pilaf

This delightful Afghan-inspired dish combines the sweetness of apples and bananas with aromatic spices and fluffy rice. It's a unique main dish that balances flavors and textures, perfect for a satisfying meal.

Steps

1. Rinse the basmati rice under cold water until the water runs clear, then soak it for 20 minutes. 2. In a medium pot, heat the butter or oil over medium heat. Add the diced apple and sauté for 2-3 minutes until slightly softened. 3. Add the soaked and drained rice to the pot, stirring for another minute to coat the rice in the butter and apple. 4. Pour in the broth, add the sliced banana, cinnamon, cardamom, and a pinch of salt. Stir gently to combine. 5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed. 6. Remove from heat and let it sit covered for another 5 minutes. 7. Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
