
Steps
- In a small saucepan, combine the chopped dried apricots and water.
- Bring to a simmer over medium heat, then reduce to low and cook for 5 minutes until the apricots soften.
- Add the rolled oats, maple syrup, cinnamon, and a pinch of salt. Stir well to combine.
- Continue to cook for another 5-7 minutes, stirring occasionally, until the oats are cooked and the mixture thickens.
- Remove from heat and let cool slightly.
- Serve warm or at room temperature, garnished with fresh mint leaves if desired.
