Apricot, Maple & Oat Compote

Steps

1. In a small saucepan, combine the chopped dried apricots and water. 2. Bring to a simmer over medium heat, then reduce to low and cook for 5 minutes until the apricots soften. 3. Add the rolled oats, maple syrup, cinnamon, and a pinch of salt. Stir well to combine. 4. Continue to cook for another 5-7 minutes, stirring occasionally, until the oats are cooked and the mixture thickens. 5. Remove from heat and let cool slightly. 6. Serve warm or at room temperature, garnished with fresh mint leaves if desired.
