Steps
1. Start by chopping the onion and garlic. Place them in a pot with the olive oil and cook until the onions are soft and translucent.
2. Add the vegetable broth, olives, and nuts to the pot and bring to a boil.
3. Reduce the heat and simmer for 15 minutes.
4. Peel, pit, and mash the avocado with a fork.
5. Add the mashed avocado to the pot and stir until all the ingredients are combined.
6. Simmer for 5 more minutes.
7. Season with salt and pepper to taste.
8. Serve the soup in a bowl and garnish with chopped parsley (optional).
