
Steps
- Heat the vegetable oil in a pan over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent.
- Add the curry powder, cumin, coriander, turmeric, and red chili powder to the pan. Stir well to combine the spices with the onion and garlic.
- Peel and slice the ripe banana into thin rounds. Add the banana slices to the pan and gently stir to coat them with the spice mixture.
- Pour in the coconut milk and season with salt. Stir everything together and let the curry simmer for about 5 minutes, until the flavors meld together.
- Remove the banana curry from heat and garnish with fresh cilantro.
- Serve hot with steamed rice or naan bread.
