Steps
1. Preheat a grill or grill pan to medium-high heat.
2. In a small bowl, combine the olive oil, rosemary, thyme, salt, and pepper. Rub the mixture all over the lamb chops.
3. Grill the lamb chops for about 4-5 minutes per side, or until cooked to desired doneness. Remove from heat and let them rest for a few minutes.
4. Meanwhile, prepare the mint sauce by combining the mint leaves, parsley leaves, lemon juice, honey, olive oil, salt, and pepper in a blender or food processor. Blend until smooth.
5. Serve the grilled lamb chops with the mint sauce on the side.
