
Steps
- Preheat a grill or grill pan to medium-high heat.
- In a small bowl, combine the olive oil, rosemary, thyme, salt, and pepper. Rub the mixture all over the lamb chops.
- Grill the lamb chops for about 4-5 minutes per side, or until cooked to desired doneness. Remove from heat and let them rest for a few minutes.
- Meanwhile, prepare the mint sauce by combining the mint leaves, parsley leaves, lemon juice, honey, olive oil, salt, and pepper in a blender or food processor. Blend until smooth.
- Serve the grilled lamb chops with the mint sauce on the side.
