Steps

2. Cut a pocket into the side of the chicken breast.
3. In a bowl, mash the banana and mix it with breadcrumbs, cheese, salt, and pepper.
4. Stuff the banana mixture into the pocket of the chicken breast.
5. Heat olive oil in an oven-safe skillet and sear the chicken until golden brown.
6. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.
