Barbecue Vegetables in Foil

An easy, healthy, and delicious alternative to grilled vegetables, simple to prepare and the clean-up is minimal!

Steps

  1. Preheat oven to 375 degrees F
  2. Combine olive oil, bell pepper, onion, asparagus, garlic, and salt & pepper in a bowl
  3. Place vegetables in the center of a piece of aluminum foil
  4. Wrap the foil around the vegetables, making sure it is tightly sealed
  5. Bake in preheated oven for 30 minutes
  6. Enjoy!

  • 2 tsp olive oil, 1 bell pepper (chopped into 1 inch pieces), 1 sweet onion (chopped into 1 inch pieces), 2-3 asparagus (cut into 1 inch pieces), 1 garlic clove (finely chopped), pinch of salt & pepper
