Brazilian Breakfast Toast

A light, flavorful Brazilian breakfast of toasted bread, ooey-gooey melted cheese, eggs, and a refreshing watermelon twist!

Steps

1. Preheat a non-stick skillet over medium heat. 2. Toast both slices of bread lightly and spread mayonnaise on each slice. 3. Place cheese on one slice and top with the other. 4. Crack egg into the skillet and cook until desired doneness. 5. Place egg on top of the cheese slice and sprinkle with salt and pepper to taste. 6. Place the egg and cheese slice on top of the other slice of bread. 7. Place the assembled toast in the skillet until the bottom of the toast is lightly brown and cheese is melted. 8. Slice the toast in two and top with diced watermelon cubes.
