Caprese Tortellini with Mushrooms

This hearty, mushroom-filled vegetarian version of classic Caprese pasta will make a delicious main dish for lunch or dinner!

Steps

1. Bring a pot of salted water to a boil. Cook tortellini according to the package instructions. 2. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add mushrooms and garlic and cook for 3-5 minutes, stirring frequently, until mushrooms are softened and lightly browned. 3. Once the tortellini are cooked, add to the skillet with the mushrooms. Stir in the spinach and cherry tomatoes and cook for 2-3 minutes, until spinach is wilted and tomatoes are softened. 4. Season with salt and pepper, to taste. Serve topped with fresh basil, if desired.

• 3oz. tricolored cheese tortellini • 3-4 mushrooms, sliced • ½ tsp. garlic, minced • 1 tbsp. olive oil • ¼ cup spinach, roughly chopped • 2-3 cherry tomatoes, cut in half • Salt and pepper, to taste • Fresh basil, to garnish
