Herb-Crusted Lamb Chops with Garlic Mashed Potatoes

Steps

1. Preheat oven to 400°F (200°C). 2. Mix rosemary, thyme, minced garlic, salt, and pepper in a small bowl. 3. Rub the lamb chop with olive oil and then coat with the herb mixture. 4. Heat a skillet over medium-high heat and sear the lamb chop for 2 minutes on each side. 5. Transfer the skillet to the oven and roast the lamb for 6-8 minutes for medium-rare. 6. Meanwhile, peel and chop the potato. Boil in salted water until tender, about 15 minutes. 7. In a small pot, sauté the garlic clove in butter until fragrant. 8. Drain potatoes and mash them with the garlic butter and milk until smooth. 9. Remove lamb from oven and let rest for 5 minutes before serving with mashed potatoes.
