Steps
1. Rinse the quinoa under cold water in a fine mesh strainer.
2. In a small saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
3. While the quinoa cooks, heat olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt.
4. Cook the onions for about 10-15 minutes, stirring occasionally, until they are caramelized and golden brown.
5. Add the fresh spinach to the skillet and sauté for another 2-3 minutes until wilted.
6. Once the quinoa is cooked, fluff it with a fork and mix it into the skillet with the onions and spinach. Adjust seasoning with salt and pepper.
7. For extra flavor, drizzle with balsamic vinegar and top with feta cheese if desired.
