Steps
1. Cook pasta according to package instructions. Drain and set aside.
2. In a bowl, mash the avocado until smooth. Season with salt and pepper.
3. In a non-stick skillet, fry the eggs sunny-side-up until the whites are set but the yolks are still runny.
4. In the same skillet, add the cooked pasta and halved cherry tomatoes. Stir well to combine.
5. Add the mashed avocado and shredded cheese to the skillet. Mix until the cheese is melted and everything is well coated.
6. Transfer the cheesy avocado pasta to a plate and top with the fried eggs.
7. Garnish with optional toppings, if desired.
8. Serve immediately and enjoy!
