Steps
1. Preheat the oven to 375°F (190°C).
2. Peel and thinly slice the potato.
3. In a bowl, mix together the grated cheese, diced onions, mayonnaise, eggs, salt, and pepper.
4. Grease a baking dish and layer half of the potato slices on the bottom.
5. Pour half of the cheese mixture over the potatoes.
6. Repeat the layers with the remaining potatoes and cheese mixture.
7. Cover the baking dish with foil and bake for 30 minutes.
8. Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the top is golden brown.
9. Serve hot and enjoy!
