This delicious combination of potato, cheese and bacon is sure to become your new go-to treat!
1. Preheat oven to 200 C and line tray with greaseproof paper. 2. Cut the potato in half and place both halves cut-side up on the lined tray. 3. Place bacon strips over the tops of the potato halves. 4. Sprinkle the grated cheese over the potato. 5. Bake in preheated oven for 20-25 minutes, until the bacon is crisp and the potatoes are cooked through. 6. Remove from oven and top with a dollop of sour cream. Sprinkle with salt, pepper and serve.
