Steps
1. In a small skillet, melt the butter over medium heat.
2. Add the diced carrots and sauté for about 5 minutes until they start to soften.
3. Add the minced garlic and cook for another minute until fragrant.
4. In a bowl, whisk the eggs, then add salt, pepper, and cheese.
5. Pour the egg mixture over the sautéed carrots and garlic in the skillet.
6. Cook on low heat until the edges start to set, about 3-4 minutes.
7. Optionally, place the skillet under a broiler for 1-2 minutes to set the top and melt the cheese.
8. Remove from heat, garnish with fresh herbs if desired, and serve warm.
