Steps

3. In a bowl, whisk together the eggs, cheese, salt, and pepper.
4. Pour the egg mixture over the sautéed carrots in the skillet.
5. Cook for about 5-7 minutes on medium-low heat until the edges start to set.
6. If desired, finish under the broiler for an additional 2-3 minutes to set the top.
7. Remove from heat, let cool for a minute, then slice and serve, garnished with fresh herbs if using.
