Steps

3. Stir in the black beans and cooked rice, mixing well. Season with salt and pepper to taste.
4. In a separate pan, fry the egg to your liking (sunny-side up or over easy).
5. Once the rice and bean mixture is heated through, sprinkle the shredded cheese on top and cover until melted.
6. Serve the cheesy mushroom bean mixture in a bowl, topped with the fried egg and garnished with fresh herbs if desired.
