Steps
1. Peel and dice the potato into small cubes.
2. In a skillet, heat the olive oil over medium heat.
3. Add the diced potatoes to the skillet, season with salt and pepper, and cook until golden and tender, about 10-12 minutes, stirring occasionally.
4. While the potatoes are cooking, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
5. Once the potatoes are cooked, push them to one side of the skillet and pour the eggs into the other side.
6. Allow the eggs to sit for a few moments, then gently scramble them with a spatula, mixing with the potatoes as they cook.
7. When the eggs are just set, sprinkle the shredded cheese on top and cover the skillet for 1-2 minutes to melt the cheese.
8. Serve hot, garnished with chopped green onions or herbs if desired.
