
Steps
- Peel and dice the potato into small cubes.
- In a skillet, heat the olive oil over medium heat.
- Add the diced potatoes to the skillet, season with salt and pepper, and cook until golden and tender, about 10-12 minutes, stirring occasionally.
- While the potatoes are cooking, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
- Once the potatoes are cooked, push them to one side of the skillet and pour the eggs into the other side.
- Allow the eggs to sit for a few moments, then gently scramble them with a spatula, mixing with the potatoes as they cook.
- When the eggs are just set, sprinkle the shredded cheese on top and cover the skillet for 1-2 minutes to melt the cheese.
- Serve hot, garnished with chopped green onions or herbs if desired.
