Steps
1. Pat the chicken breast dry and season both sides with salt and pepper.
2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
3. Place the chicken breast in the skillet and cook for 5-6 minutes on one side.
4. Flip the chicken, pour soy sauce over it, and cook for another 5 minutes until cooked through.
5. Reduce heat to low and sprinkle shredded mozzarella evenly on top of the chicken.
6. Cover the skillet with a lid and let the cheese melt, about 2-3 minutes.
7. Remove from heat, garnish with chopped green onions if desired, and serve immediately.
