Steps
1. Preheat your oven to 375°F (190°C).
2. If using frozen spinach, thaw and drain it well. Fresh spinach should be sautéed briefly until wilted.
3. In a bowl, mix the spinach, cream cheese, mozzarella, minced garlic, salt, pepper, and Italian herbs until combined.
4. Cut a pocket in the chicken breast and stuff it with the cheese and spinach mixture.
5. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breast for 3-4 minutes on each side until golden brown.
6. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes until fully cooked (internal temperature of 165°F/75°C).
7. Let it rest for a few minutes before slicing and serving.
