Steps
1. Preheat the oven to 375°F (190°C).
2. Heat the olive oil in a pan over medium heat and sauté the minced garlic until fragrant, about 1 minute.
3. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
4. In a bowl, mix the cream cheese, mozzarella cheese, sautéed spinach, salt, pepper, and paprika until well combined.
5. Carefully slice a pocket into the chicken breast and stuff it with the cheese and spinach mixture.
6. Season the outside of the chicken breast with salt and pepper.
7. Place the stuffed chicken breast in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
8. Let it rest for 5 minutes before slicing and serving.
