Steps
1. In a large pan, heat some oil or butter over medium heat.
2. Add the caramelized onions and cook for a couple of minutes until they are heated through.
3. Add the diced tomatoes and cook for another 2-3 minutes, until the tomatoes start to soften.
4. Add the cooked rice to the pan and stir everything together.
5. Sprinkle the shredded cheese over the rice mixture and cover the pan with a lid. Let it cook for 2-3 minutes, until the cheese has melted.
6. Season with salt and pepper to taste.
7. Serve hot and enjoy!
