1. Heat the oil in a large pan, add the garlic and sauté until pungent. 2. Add the chicken, onion and red pepper, sauté until the chicken is golden. 3. Add the tomato purée and fry for a few minutes. 4. Add the rice and mix, pour the vegetable broth, cover with a lid and cook for about 20 minutes in low heat. 5. Add the peas and cook for 5 more minutes. 6. Serve with a fresh salad.
