- Instructions:
- Heat the oil in a nonstick pan over medium heat.
- Add the shrimp and sauté for 3 minutes until it starts to turn pink.
- Add chopped tomatoes and cook for 1 minute more.
- Crack the eggs into the pan, stirring it all together with the shrimp and tomato.
- Add salt and pepper, to taste.
- Cook until the eggs are done, stirring gently.
- Serve hot.
