Steps
1. Preheat the oven to 375°F (190°C).
2. Use a sharp knife to create a pocket in the chicken breast.
3. Stuff the pocket with chopped dark chocolate and fresh thyme.
4. Rub the outside of the chicken with olive oil, salt, and pepper.
5. Place the chicken in a baking dish and drizzle with balsamic vinegar.
6. Bake for 25-30 minutes or until the chicken is cooked through and the juices run clear.
7. Let it rest for 5 minutes before slicing and serving.
