Steps
1. Rinse the quinoa under cold water and drain.
2. In a small saucepan, combine the quinoa and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
3. While the quinoa cooks, season the chicken breast with salt and pepper.
4. In a skillet, heat olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side until fully cooked.
5. In a small bowl, mix the orange juice, zest, and honey. Pour this mixture over the chicken in the skillet, cooking for an additional 2-3 minutes until the glaze thickens.
6. Fluff the quinoa with a fork and stir in a little orange zest for extra flavor.
7. Serve the chicken over the quinoa, drizzled with the remaining glaze, and garnish with fresh parsley.
