Steps
1. Rinse the jasmine rice under cold water until the water runs clear.
2. In a small pot, combine the rinsed rice with 1 cup of coconut milk and a pinch of salt. Bring to a boil, then reduce to a simmer and cover. Cook for 15 minutes or until the rice is tender and the liquid is absorbed.
3. In a skillet, heat 1 teaspoon of olive oil over medium heat. Add the mixed vegetables and sauté for about 3-4 minutes until they start to soften.
4. Stir in the curry powder and cook for another minute until fragrant.
5. Once the rice is cooked, fluff it with a fork and serve it in a bowl. Top with the sautéed vegetables and drizzle any remaining coconut milk over the top.
6. Garnish with fresh cilantro if desired and enjoy your meal!
