Steps
1. In a bowl, mash the avocado until smooth.
2. Add chickpeas and mash lightly, leaving some chickpeas whole for texture.
3. Mix in diced tomato, red onion, cilantro, lemon juice, salt, and pepper.
4. Lay the tortilla flat on a plate and place the baby spinach leaves in the center.
5. Spoon the avocado chickpea mixture on top of the spinach.
6. Fold the sides of the tortilla and roll it up tightly to form a wrap.
7. Cut the wrap in half if desired and serve immediately.
