1. Cut the avocado in half and remove the pit. Scoop out some flesh to create space for the quinoa salad. 2. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, lemon juice, salt, and pepper. 3. Stuff the avocado halves with the quinoa salad mixture. 4. Serve chilled and enjoy!
