
Steps
- Heat oil in a large pot.
- Add garlic, potatoes and broccoli and cook covered for 5 minutes.
- Add almond milk and vegetable broth, bring to a boil and reduce heat. Simmer for 10 minutes.
- Using a hand blender, purée soup until creamy and smooth.
- Add salt and pepper to taste.
- Serve hot.
