Steps
1. Heat oil in a large pot.
2. Add garlic, potatoes and broccoli and cook covered for 5 minutes.
3. Add almond milk and vegetable broth, bring to a boil and reduce heat. Simmer for 10 minutes.
4. Using a hand blender, purée soup until creamy and smooth.
5. Add salt and pepper to taste.
6. Serve hot.
