1. Heat olive oil in a pan over medium heat. 2. Add the sliced onions and sauté until translucent. 3. Add the diced ham and cook for 2-3 minutes until slightly browned. 4. Add the sliced carrots, salt, and pepper. Cook for about 8-10 minutes until carrots are tender. 5. Stir in the crème fraîche and cook for another 2 minutes until heated through and creamy. 6. Adjust seasoning if needed. 7. Serve warm, garnished with fresh parsley if desired.
