Steps
1. In a small bowl, mix soy sauce, honey, and minced garlic to create the glaze.
2. Heat vegetable oil in a pan over medium heat.
3. Add chicken slices and cook until browned and cooked through, about 5-6 minutes.
4. Add broccoli, bell pepper, and carrots to the pan; stir-fry for 3-4 minutes until vegetables are tender-crisp.
5. Pour the soy glaze over the chicken and vegetables; stir well to coat evenly.
6. Cook for another 1-2 minutes until the sauce thickens slightly.
7. Season with salt and pepper to taste.
8. Remove from heat and garnish with chopped green onion if desired.
9. Serve hot as a main dish.
