Steps
1. In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
2. Add fresh spinach and cook until wilted, about 2-3 minutes.
3. Pour in the vegetable broth and bring to a simmer for another 5 minutes.
4. Remove from heat and let cool slightly.
5. In a blender, combine the spinach mixture, diced avocado, heavy cream, salt, pepper, and lemon juice. Blend until smooth and creamy.
6. Return the soup to the saucepan and heat gently before serving.
