Steps
1. Spiralize the zucchini using a spiralizer or vegetable peeler to create noodles.
2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
3. Add shrimp to the skillet, season with salt, pepper, and red pepper flakes, and cook for 2-3 minutes on each side until pink and opaque.
4. Add the zucchini noodles to the skillet and toss everything together for about 2 minutes until the noodles are just tender.
5. Remove from heat, squeeze lemon juice over the top, and garnish with fresh parsley before serving.
