
Steps
- Start by spiralizing the zucchini to create noodles. If you don't have a spiralizer, you can use a vegetable peeler to make thin strips.
- Season the chicken breast with olive oil, salt, and pepper. Grill it over medium heat for about 6-7 minutes on each side, or until fully cooked.
- In a pan, lightly sauté the zucchini noodles for about 2-3 minutes until just tender.
- Remove the pan from heat and toss the zucchini noodles with the basil pesto until evenly coated.
- Slice the grilled chicken and place it on top of the zucchini noodles.
- Garnish with Parmesan cheese and fresh basil leaves if desired, and serve immediately.
