Steps
1. Start by spiralizing the zucchini to create noodles. If you don't have a spiralizer, you can use a vegetable peeler to make thin strips.
2. Season the chicken breast with olive oil, salt, and pepper. Grill it over medium heat for about 6-7 minutes on each side, or until fully cooked.
3. In a pan, lightly sauté the zucchini noodles for about 2-3 minutes until just tender.
4. Remove the pan from heat and toss the zucchini noodles with the basil pesto until evenly coated.
5. Slice the grilled chicken and place it on top of the zucchini noodles.
6. Garnish with Parmesan cheese and fresh basil leaves if desired, and serve immediately.
