Steps
1. Rinse the red lentils thoroughly under cold water.
2. Peel and dice the sweet potato into small pieces.
3. In a small pot, combine sweet potato pieces, rinsed lentils, and water.
4. Bring to a boil, then reduce heat and simmer gently for 20 minutes or until both lentils and sweet potato are very soft.
5. Drain any excess water, reserving a little to adjust texture.
6. Mash the mixture thoroughly with a fork or blend to a smooth consistency suitable for your baby's eating stage.
7. Stir in olive oil for added healthy fats, if using.
8. Allow to cool to a warm, safe temperature before serving.
