Ginger-Spiced Vegetable Mash

Steps

1. In a medium pot, bring water to a boil. Add the diced potato and carrot, and cook for about 15 minutes or until tender. 2. While the vegetables are cooking, heat the olive oil in a pan over medium heat. Add the grated ginger and sauté for about 1 minute until fragrant. 3. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat. 4. Once the potatoes and carrots are cooked, drain them and return to the pot. Mash them together with a fork or potato masher. 5. Add the sautéed spinach and ginger mixture to the mashed veggies. Mix in the vegetable broth (or water) for desired consistency, and season with salt and pepper. If using, stir in butter for extra creaminess. 6. Serve warm and enjoy your healthy, flavorful dish!
