Steps
1. In a bowl, mix the yogurt, olive oil, garlic powder, paprika, salt, and pepper to create the marinade.
2. Cut the chicken breast into bite-sized pieces and coat with the marinade. Let it marinate for at least 15 minutes.
3. Heat a non-stick skillet over medium heat and cook the marinated chicken for about 8-10 minutes until fully cooked.
4. While the chicken is cooking, prepare the rice according to package instructions.
5. In a serving bowl, place the cooked rice as a base.
6. Add the cooked chicken on top, followed by cherry tomatoes and cucumber.
7. Garnish with fresh parsley and serve warm.
