Steps
1. Rinse the quinoa under cold water and cook it according to package instructions (usually about 15 minutes).
2. While the quinoa cooks, marinate the chicken breast with olive oil, lemon juice, salt, and pepper for about 10 minutes.
3. Heat a skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side until fully cooked.
4. Chop the cherry tomatoes, cucumber, and bell pepper into bite-sized pieces.
5. In a small bowl, mix the plain yogurt with a pinch of salt, pepper, and optional herbs for the sauce.
6. Once the quinoa is ready, fluff it with a fork and divide it into a bowl.
7. Slice the cooked chicken and place it on top of the quinoa.
8. Add the chopped vegetables around the chicken and drizzle the yogurt sauce over the top.
9. Garnish with fresh herbs and serve immediately.
