Steps
1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a mixing bowl, combine the chopped dates, flour, oats, brown sugar, baking powder, baking soda, and salt.
3. In another bowl, whisk together the milk, melted butter, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and mix until just combined.
5. Fill the muffin cups about 2/3 full with the batter.
6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
7. Allow the muffins to cool slightly before drizzling with caramel sauce.
