- In a medium bowl, combine avocado, black beans, sweet corn, tomatoes, red onion and cilantro.
- In a small bowl, mix together garlic, salsa, and olive oil.
- Place cooked brown rice in a bowl and top with the salsa mixture and the vegetable mixture.
- Mix gently and enjoy!
