
Steps
- Season the chicken breast with salt and pepper, then grill or pan-sear until fully cooked. Slice into strips.
- In a pan, heat some olive oil and sauté the sliced onions until caramelized. Remove and set aside.
- In the same pan, add a bit more oil and cook the diced potatoes until golden and crispy. Remove and set aside.
- Cook the rice according to package instructions.
- In a separate pan, wilt the fresh spinach with a little oil.
- To assemble the bowl, start with a base of rice, then arrange the chicken strips, caramelized onions, crispy potatoes, and sautéed spinach on top.
- Serve hot and enjoy!
