Fish Fillet with Potato and Asparagus

Steps

1. Preheat oven to 350°F. 2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté until fragrant. 3. Add red pepper and potato slices and sauté for 3 minutes. 4. Add white wine and vegetable stock, bring to a simmer, and cook for 5 minutes. 5. Place the fish fillet and asparagus in the skillet, and season with salt and pepper. Simmer for 2 minutes. 6. Transfer the skillet to the oven and bake for 10 minutes, or until fish is cooked through. 7. Serve warm.
