Steps
1. Preheat oven to 400 degrees Fahrenheit.
2. In a medium-sized bowl, combine the onion, bell pepper, garlic paste, zucchini, eggplant, cooked rice, black pepper, and oregano.
3. Place the salmon on a baking sheet and spread the veggie mixture over the top.
4. Drizzle the top of the recipe with olive oil.
5. Bake in the oven for 15 minutes or until the salmon is cooked through.
