Steps
1. Heat the oil in a skillet over medium-high heat.
2. Add the prawns and season with salt. Cook for 1-2 minutes until slightly browned.
3. Add the onion and tomatoes and sauté for an additional 1-2 minutes.
4. Reduce the heat to low and add the pumpkin puree, lime juice and parsley. Mix well to combine.
5. Cook for an additional 2-3 minutes, stirring often.
6. Season with freshly ground black pepper and adjust to taste.
