Roasted Chicken with Herb Compound Butter

This classic French recipe uses a flavorful compound butter made from fresh herbs and garlic to sublimely compliment the taste of roasted chicken.

Steps

1. Start by preparing the herb compound butter. In a small bowl, mix together soft butter, minced garlic, chopped parsley, and chopped thyme. Set aside. 2. Place the chicken breast in a baking dish. Spread the herb compound butter over the chicken and top with one garlic clove and a bay leaf. Sprinkle with salt, pepper and olive oil to taste. 3. Preheat the oven to 400°F (200°C). Roast the chicken for 20-30 minutes or until the chicken is cooked through. 4. Remove from the oven and enjoy!
