Fruit Caviar Cake

Molecular gastronomy fun! This Fruit Caviar Cake is a pleasant surprise, with its crunchy layers of colorful beads and soft fishscale texture.

Steps

1. Squeeze the orange juice into a bowl and mix it with the fruit juice and sugar. 2. In a separate bowl, mix sodium alginate with 2 tablespoons of cold water and stir. 3. In a third bowl, mix calcium lactate with two cups of cold water and stir. 4. Using a dropper, drop the sodium alginate mix into the calcium lactate mix and let it sit for 15 minutes. 5. Heat up 1/2 cup of vegetable oil in a pan on the stove to low-medium heat. 6. Drop the sodium alginate and calcium lactate mix, one drop at a time, into the heated oil. 7. Cook each drop for 20-30 seconds and remove from heat. 8. Assemble the cake by layering the caviar beads on top of a layer of cake. 9. Lastly, top with the orange juice and sugar mixture.
