Steps
1. Prepare the mango pearls:
- Blend mango puree with sodium alginate until smooth.
- Mix calcium lactate with water in a separate bowl.
- Drop small spoonfuls of the mango mixture into the calcium bath and let them form into pearls for 1-2 minutes.
- Remove pearls and rinse with water.
2. Prepare the coconut foam:
- Mix coconut milk with soy lecithin.
- Blend with an immersion blender until foam forms on top.
3. Assemble:
- Serve mango pearls in a small dish and top with coconut foam.
- Garnish with a mint leaf, if desired.
