Steps

1. Preheat oven to 200°C (390°F). 2. Toss carrot, zucchini, and cherry tomatoes with olive oil, salt, pepper, and half the thyme leaves. Spread on a baking sheet and roast for 15-20 minutes until tender. 3. Season the beef steak with salt and pepper. 4. Heat a skillet over medium-high heat. Add butter and let it melt. 5. Add minced garlic to the skillet and sauté for 30 seconds. 6. Place the steak in the skillet and cook for 3-4 minutes on each side for medium-rare (adjust time for preferred doneness). 7. Spoon the garlic butter over the steak as it cooks. 8. Remove steak and let rest for 5 minutes. 9. Plate the steak with roasted vegetables, garnish with fresh parsley and remaining thyme.
