1. Rinse the rice under cold water until water runs clear. 2. In a small pot, combine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. 3. While rice cooks, heat olive oil and butter in a skillet over medium heat. 4. Add minced garlic and sauté for 1 minute until fragrant. 5. Add sliced mushrooms, season with salt and pepper, and cook until golden and tender, about 5-7 minutes. 6.
